What day is it today? Post Christmas and not quite the New Year, all the days have merged and the routines have gone out the window. Will the bin men come and collect all the painstakingly sorted out recyclable waste before the wind blows it all away?

I didn't have any ground coriander seeds but for my size vegetable (750g) it took approx 65 mins in a hot oven to roast. Rubbed in the vegetable Oil and sea salt flakes over the outside. Sit in a roasting tray and put into a hot oven 180-200 c
It's not the most beautiful of vegetables but once cooked and sliced up, the delicate flavour and the saltiness of the roasted skin makes an excellent tasty substitute to meat.
